Cut Fillet into large pieces. Pour a little olive oil into a pan and preheat pan. Coat both sides of the fillets with salt and pepper. Place the fish into the pan. After a few minutes cover the pan and add water. This will steam the fish causing it to cook more evenly and prevent burning.
